Cooking classes at Quickenberry Guesthouse
Quickenberry offers a range of cooking lessons for small groups of up to
6 people. The content of the classes can be suited to the interests of the guests or they can choose from the themes below.
Courses offered:
Dinner Party Food:
This demonstration will cover a wide variety of foods and skills and give you ideas on how to personalise a four course dinner while following a menu as below:
- Homemade ravioli of Marlborough salmon and tomato with cucumber, caper and sundried tomato salsa
- Roasted asparagus in filo pastry with risotto rice and baked Kumara on rice vinegar and olive oil
- Cutlets of lamb coated in Moroccan spices on spinach tartlet and red wine reduction with new potatoes and salad leaves tossed in balsamic vinegar and olive oil
- Panna cotta with strawberries marinated in Cointreau and chocolate tuile
Participants will be able to get some hands-on experience if desired and all food cooked will be served and tasted with some complimentary wine. The above menu can be changed to suit individual tastes and requirements.

Pasta and Pastry
This course cover a range of techniques in how to make and use different doughs like shortcrust, puff pastry and pasta dough. You learn how to cook dried pasta properly and how to make ravioli, tortellini, noodles and more.
You get to know ideas on different fillings and sauces. Some of the pasta will be served as lunch with a glass of wine.

Vegetables and Salads
You learn how to cook a wide range of vegetables in many different and interesting ways. Like braised beetroot, red cabbage, ratatouille, asparagus and if available some interesting and seldom used vegetables like kohlrabi, Florence fennel or celeriac. This course also covers salads and dressings. Be inspired by vegetables and greens!

Swiss Cooking
Italian Foods
This lesson covers a range of Italian specialities like polenta, risotto, gnocchi and also some pasta. It is also designed to give you a taste and appreciation of different Italian products like olive oil, Parmesan cheese, balsamic vinegar, Parma ham, olives and much more. You get to eat the cooked products and a glass of wine is served as well.

Desserts and Sweets
A variety of desserts is shown and demonstrated such as Tiramisu, Panna Cotta, Tarte Tatin and how to make simple tartlets with seasonal fruits and berries. It covers also some baking of cakes and puddings like chocolate cake or date pudding. Sauces and cremes are also covered. Coffee will be served at the end of the lesson with a glass of liqueur or sweet wine.

Swiss Food
This class covers some typical Swiss dishes such as Swiss
Onion Tart, Cheese Tartlets, Spaetzle, Pesce in carpione,
risotto and others. They are often quite rustic country
dishes. There will also be some Swiss cheese for tasting
accompanied by Swiss wine.

The classes are held at Quickenberry Guesthouse
located
on Terrace Downs Golf Resort. A minimum of two persons is required. The maximum is
six. However by special request all classes can be taken on a one to one basis.
The lessons are given by Swiss trained chef Robert Koller, together with wife Christine the owner of Quickenberry. He has won many prizes and awards in his previous restaurants in Auckland and Mt. Somers.
